Chai-Spiced Snickerdoodle Bars

Growing up, there was always that one recipe that stood out from all the others. For me, it was the snickerdoodle bars made by someone I knew, and they were nothing short of incredible. Soft, chewy, and coated in just the right amount of cinnamon-sugar goodness, they quickly became one of my all-time favorite treats. I hadn’t thought about them in years, but recently, while strolling through the bakery aisle, I saw a pack of store-bought snickerdoodle bars and was instantly transported back to those delicious memories.

Chai-Spiced Snickerdoodle Bars

Ingredients:

For the Bars:

  • 1 cup unsalted butter, softened

  • 1 1/2 cups granulated sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 3 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 tablespoon ground cinnamon

  • 1 teaspoon ground ginger

  • 1/2 teaspoon ground cardamom

  • 1/2 teaspoon ground cloves

  • 1/4 teaspoon ground nutmeg

For the Cinnamon Sugar Topping:

  • 1/4 cup granulated sugar

  • 1 tablespoon ground cinnamon

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

  2. Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

  3. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.

  4. Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and all the spices (cinnamon, ginger, cardamom, cloves, and nutmeg) until well blended.

  5. Mix Dry Ingredients into Wet: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Do not overmix.

  6. Spread the Batter: Spread the batter evenly into the prepared baking pan. Smooth the top with a spatula.

  7. Prepare the Cinnamon Sugar: In a small bowl, mix the sugar and cinnamon for the topping.

  8. Add Topping: Sprinkle the cinnamon sugar mixture evenly over the top of the batter.

  9. Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.

  10. Cool: Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

  11. Cut and Serve: Once cooled, cut into squares or rectangles and serve. These bars are delicious on their own or paired with a warm cup of chai!

Storage:

Store the Chai-Spiced Snickerdoodle Bars in an airtight container at room temperature for up to a week. They also freeze well, so you can enjoy them later!

Tips:

  • For an extra touch, consider drizzling a simple glaze made of powdered sugar and milk over the bars once they’ve cooled.

  • Feel free to add a handful of white chocolate or butterscotch chips to the batter for added sweetness!

These Chai-Spiced Snickerdoodle Bars are sure to become a favorite, with their soft texture and warm spices capturing the essence of chai! Enjoy!
